Jam Puff Danish Recipe

These jam puffs are an easy danish pastry recipe with ready made puff pastry. You of course have the option to make your own and use that! That extra effort is always worth it, sort of, kind of, sometimes. Anyway, to stay true to “easy danish pastry recipe”, we recommend getting shop bought.

There are benefits of this of course; the convenience, how much time you’ll save and the added bonus that shop bought puff pastry is suitable for vegans! You can also make huge batches using shop bought pastry in little time, so you can bake an array of flavours to choose from. Mmm .. did someone say continental breakfast?

These old school classic Jam Puffs, Jam Tarts, Jam Danish .. whatever floats your boat, are a sure winner yet so simple. They kind of remind us of those Jam Tarts you get in the supermarkets, made by Hoppers. Those however are made with shortcrust pastry.

 

Quick Jam Tart Recipe

If you want the more traditional Jam Tart you get in supermarkets, then follow the following steps:

  • Substitute the puff pastry for shortcrust,
  • Leave out the custard and apricot glaze,
  • Follow recipe with the above in mind.

We personally prefer using puff pastry for our Jam Puffs because it creates a lighter treat to enjoy, meaning you can scoff down a couple more before feeling too sick. And don’t even get us started on what the custard provides.

If you wanted to be a little extra and had the time to do so, then resting the pastry before placing in the oven is recommended. This allows the pastry to puff up a bit more around the jam, ensuring it stays nicely tucked into the pastry borders when cooking. Yum yum. Don’t worry if you’re filling does burst out though, it’s happened multiple times to us, but it still tastes as delicious as ever.

The size of these is up to you, but we usually make 6 with the amount of pastry suggested. If you decide to rest your pastries beforehand you could cut your pastry sheet into 8 but skip folding down the edges (shown below). However if you are folding the pastry around the filling then we would suggest 8 or it will get messy! 

Vegan Jam Puffs

If you’re using shop bought pastry, you simply need to leave out the custard or find a vegan substitute. Switch the egg wash for a non dairy milk wash.

We’ve included an icing glaze on top of the Jam Puffs but this is completely optional. We mainly only glaze our Apple Cinnamon Swirls with the icing glaze, but if we’re making both at the same time and there’s glaze to spare, it goes perfectly well. And well, waste not want not. This homemade icing glaze is also vegan too, fyi.

Instructions
  1. Preheat the oven to 180 degrees, fan oven.
  2. Roll out the pastry into a neat rectangle (if using homemade) and place landscape on your counter. Then cut the pastry into smaller rectangles/squares First slice in half horizontally, then with each long strip of pastry, cut vertically into 3. They will be around 10x12cm each.
  3. Fold edges of the smaller rectangles/squares into each other, so you have a thick border around each rectangle. You may want to cut some extra pastry but we just squish it in. It doesn’t make a difference.
  4. If you have a spare hour, you can leave your folded pastry to rest on baking paper for an hour to rise. This allows for a super fluffy puffy pastry.
  5. Add one tablespoon of custard (maybe two if you’re feeling wild) into the rectangles/squares and spread evenly.
  6. Add one tablespoon (or two) or jam on top of the custard and also start to spread out. Be careful to ensure the jam and custard don’t start to mix.
  7. Place on a tray lined with baking paper.
  8. Whisk your egg and brush the borders on the jam pastries.
  9. Place into the oven for 15-20 minutes, until the pastry is a nice golden brown.
  10. While the swirls are cooking, mix the icing sugar and water in a bowl until smooth. Set aside.
  11. For an extra golden pastry and a nice sweet glaze, brush the pastry with a layer of apricot jam and put them back in the oven for a couple of minutes.
  12. Once ready, take the pastries out of the oven. Grab your bowl of icing to glaze - you may need to mix the bowl to get it to a smooth texture again. When the pastries have cooled, drizzle the icing over the pastries. Enjoy!!
Recipe Notes

*Whether you make your pastry or where you buy it, depends on how much you’ll have. Approximately, for the danishes you should have between 320-375g pastry. How much pastry you use, results in more or less danishes made.
