How to make a flax egg
PSA: this is not just for vegans. This is a great substitute if you find you have no eggs half way through baking or cooking, it just to happens to also be a vegan egg replacement.
We have tested and tried this vegan egg substitute for baking in our healthier banana bread and let me tell you .. none would be the wiser. You’ll see as we share more recipes along the way that this is not a method or ingredient we shy away from. Please don’t be put off by the term vegan, because when you try it, in the end it sometimes is just convenient.
Tips
The flaxseed can also be swapped for milled chia seeds here. The same ratios are applicable.

- 1 tbsp milled flax seeds
- 2 1/2 tbsp hot water

- Combine the two and let the flax seeds soak in the water for about 10 minutes until they swell in size. When you stir the two once they have been sitting for a while, it should resemble a thick, gloopy mixture similar to beaten eggs.
*Making vegan egg substitutes does not work exactly with a 1:1 ratio in all recipes, you may need to add some more or less. That said it still works well in baking quite well.
