Who doesn’t love a cherry bakewell? Okay, we won’t lie, marzipan might not be everyone’s favourite treat.

But, you have to admit, there is something hella enticing about almonds and cherries though. *insert drool emoji here*. So we have to give all our inspiration to Pip&Nut!! Once they released that devilish angel in a tub of their Limited Edition Cherry Bakewell Almond Butter, it was honestly a light bulb moment.

So personally, there’s only so much you can just eat almond butter straight from a jar (lol, that’s a lie), but sometimes you do want to bite into something real. Well surprise! We present a tantalising experience on your tastebuds of almond butter dancing with plump cherries to gift you the taste of the classic bakewell.

What’s more, this treat is a treaaaaaat. I mean you get all of the feelings and tastes of a cherry bakewell tart WITHOUT any of that guilt from eating the whole pack of Mr Kiplings.

Made with natural ingredients, these cherry bakewell cookies will be gone before you know it. Using oats and ground almonds as our dry base, with maple syrup and almond butter to combine to create a lighter cookie is absolute genius if we do say so ourselves.

There is a bit of a passive waiting time for this recipe. If you’re looking for something quick and don’t really want to wait around an hour for the dough to freeze; you can quickly freeze for 15 minutes to chill.

By doing this, you do risk your cookies being a bit floppy once they come out the oven. Their shape won’t hold as well as they aren’t as firm once cooked. Who knows, this could be your thing? And honestly, if you’re eating them straight out of the oven who can even tell the difference?!

Can I use frozen fruit in my cookies?

Using frozen fruit in your desserts and treats is such an easy and efficient way to bake or cook! Not only do you have seasonal fruit all year round but it is cost saving too. If you’ve seen our blueberry oat pancakes, then you’ll know frozen fruit is always an option!

So in short, yes you can use frozen fruit in cookies. We opted for fresh cherries in our recipe, mainly because the frozen cherries we had tasted .. not so nice once defrosted and chopped up. That could have been our whoopsie for leaving them out the whole day though. If you do decide to use frozen cherries, let us know how it goes in the comments below!

When using frozen fruit, a couple of things to consider:

  • Frozen fruit juices. Frozen fruit tend to have higher water content so you’ll have to be careful for additional fruit juice in your recipe. You may need to add some more thickener to balance this. Try an extra tablespoon of oats if this is an issue for you in this recipe.
  • Colouring. Frozen fruit tends to discolour quite easily. In this recipe we don’t see it as an issue if that does happen, but if you want to keep colours contained to your fruit give them a quick rinse to prevent colours from bleeding.
  • Short baking time. If you have a short baking or cooking time in your recipe, it may be worth defrosting your frozen fruit first. We don’t have an issue here as we are chopping the cherries up to fold through and then freezing our dough anyway!

Instructions
  1. Preheat the oven to 180 degrees fan.
  2. In a bowl, mix together all the dry ingredients; oats, almond flour, bicarbonate of soda, baking powder and salt.
  3. Next, we want to mix majority of the wet ingredients together; coconut oil, maple syrup and almond butter. Once these are all mixed together we can add in the eggs, almond extract and vanilla.
  4. Chop up your cherries. As mentioned before, it is completely up to you whether you want to use fresh of frozen. Frozen cherries are pitted already so it’s pretty easy. We just want enough where the cherriness of the Cherry Bakewell really comes through.
  5. Once all the ingredients are combined, we want to cover the mixture and let it chill in the freezer for half an hour. This is so that the batter is easily moldable when it comes to shaping into those balls.
  6. Ball time. Once the batter has chilled, we want to spoon out the mixture in tablespoons on a lined baking tray.
  7. It's completely up to you if you want to flatten the balls a bit to whatever height suits you. Once you're happy, pop them in the oven for 15-20 min and your golden.
